MEXICAN QUINOA

Ingredients:

  • 1tbsp oil (olive or avocado)

  • 1/2 large onion

  • 1/2 large bell pepper

  • 1/4 cup frozen corn

  • 1 medium sized sweet potato

  • 1 can beans (black, pinto, refried (vegan))

  • 1/3 cup salsa

  • 1/2 avocado

  • 1/2 cup dry quinoa (yields 1 cup cooked)

  • optional: diced jalapenos

Instructions:

  • finely chop onion and bell pepper and add to pan with oil. turn to medium heat and allow mix to soften.

  • add dry quinoa to separate pot with 1 cup water. allow water to boil then add dry quinoa. cook until water is gone (about 25min).

  • heat sweet potato in microwave (either in potato/tortilla warmer or damp paper towel) until soft.

  • chop sweet potato and add to mix, along with frozen corn.

  • turn to low heat and allow mix to cook. add salsa as needed to prevent drying out.

  • once quinoa is cooked, add to the mix. add more salsa as needed.

  • drain and rinse beans and stir into quinoa mix.

  • if using jalapenos, chop and top the mix now. add salt and pepper to taste.

  • top with avocado and serve. (tortilla chips are nice, too! siete queso, as well :))
