MEXICAN QUINOA
Ingredients:
1tbsp oil (olive or avocado)
1/2 large onion
1/2 large bell pepper
1/4 cup frozen corn
1 medium sized sweet potato
1 can beans (black, pinto, refried (vegan))
1/3 cup salsa
1/2 avocado
1/2 cup dry quinoa (yields 1 cup cooked)
optional: diced jalapenos
Instructions:
finely chop onion and bell pepper and add to pan with oil. turn to medium heat and allow mix to soften.
add dry quinoa to separate pot with 1 cup water. allow water to boil then add dry quinoa. cook until water is gone (about 25min).
heat sweet potato in microwave (either in potato/tortilla warmer or damp paper towel) until soft.
chop sweet potato and add to mix, along with frozen corn.
turn to low heat and allow mix to cook. add salsa as needed to prevent drying out.
once quinoa is cooked, add to the mix. add more salsa as needed.
drain and rinse beans and stir into quinoa mix.
if using jalapenos, chop and top the mix now. add salt and pepper to taste.
top with avocado and serve. (tortilla chips are nice, too! siete queso, as well :))
