KALE & WHITE BEAN SOUP
Ingredients:
2 tbsp olive or avocado oil
1/2 onion
2 garlic cloves, chopped/minced
2 medium sized carrots
2 celery stalks
2 small potatoes (red, yukon gold, or russet)
1/2 can diced tomatoes (spiced variation works well!)
3/4-1 cup of cooked white beans (cannelini or great northern)
1 cup chopped kale
1 tsp salt and pepper
32fl oz vegetable broth
Instructions:
add oil to pot and heat slightly. add onion and stir until translucent.
add garlic, chopped celery, and chopped carrots to pot on medium heat and stir. add chopped potatoes and let cook for about 2min.
add in tomatoes and vegetable broth and bring to boil.
once boiling, add beans and reduce to simmer (low). cook with top on for about 25min or until potatoes are cooked through. once cooked through, add chopped kale and salt/pepper and stir. turn off heat and let kale soften (about 5min).
