KALE & QUINOA BOWL
Ingredients:
1 tbsp avocado oil or olive oil
1 sweet potato
1/2 head broccoli
1/4 avocado
1/4 cooked quinoa
1 cup chopped kale
hemp seeds & cashew creme sauce
Instructions:
preheat oven to 325F
place washed sweet potato chunks and cut broccoli onto lined baking sheet. spray/coat with oil and bake for ~35 min or until potatoes are soft
make quinoa (1/4 cup dry quinoa: 1/2 cup water)
wash kale with water and remove stems. massage kale in oil until tender, chop
make cashew creme (1/2 cup soaked cashews, 1 cup water, 1 garlic glove, 2 tsp lemon juice, salt. blend until smooth)
assemble bowls and add avocado and hemp on top
