KALE & QUINOA BOWL

Ingredients:

  • 1 tbsp avocado oil or olive oil

  • 1 sweet potato

  • 1/2 head broccoli

  • 1/4 avocado

  • 1/4 cooked quinoa

  • 1 cup chopped kale

  • hemp seeds & cashew creme sauce

Instructions:

  • preheat oven to 325F

  • place washed sweet potato chunks and cut broccoli onto lined baking sheet. spray/coat with oil and bake for ~35 min or until potatoes are soft

  • make quinoa (1/4 cup dry quinoa: 1/2 cup water)

  • wash kale with water and remove stems. massage kale in oil until tender, chop

  • make cashew creme (1/2 cup soaked cashews, 1 cup water, 1 garlic glove, 2 tsp lemon juice, salt. blend until smooth)

  • assemble bowls and add avocado and hemp on top
