REFRIED BEANS
Ingredients:
1/2 tbsp avocado or olive oil
1 cup cooked pinto beans
1/4 cup finely diced onion
1 large garlic clove, finely diced
1 tbsp finely diced jalapeno
1 tsp cumin
1 tsp paprkia
1 tsp chili powder
2 tsp salt
water, as needed
Instructions:
heat pan over medium heat with oil. add onion, garlic, and jalapeno. let mixture cook for 5min or until lightly browned.
add pinto beans and stir. add spices and water and cover, leaving on low heat for 10min.
once softened, mash pinto beans with back of fork or potato masher until desired consistency.
serve alone or with cilantro.
