REFRIED BEANS

Ingredients:

  • 1/2 tbsp avocado or olive oil

  • 1 cup cooked pinto beans

  • 1/4 cup finely diced onion

  • 1 large garlic clove, finely diced

  • 1 tbsp finely diced jalapeno

  • 1 tsp cumin

  • 1 tsp paprkia

  • 1 tsp chili powder

  • 2 tsp salt

  • water, as needed

Instructions:

  • heat pan over medium heat with oil. add onion, garlic, and jalapeno. let mixture cook for 5min or until lightly browned.

  • add pinto beans and stir. add spices and water and cover, leaving on low heat for 10min.

  • once softened, mash pinto beans with back of fork or potato masher until desired consistency.

  • serve alone or with cilantro.
