VEGGIE BREAKFAST HASH

Ingredients:

  • 1 tbsp avocado or olive oil

  • 1 medium sized potato (I prefer red or golden yukon)

  • 2 tbsp chopped onion

  • 1 large clove of garlic

  • 1/2 cup chopped mushroom

  • 1/4 cup chopped bell pepper

  • 1 medium sized tomato, chopped

  • 1/2 cup cooked chickpeas

  • 1 cup chopped spinach or kale

  • 1 tbsp hemp seeds

  • salt and pepper to taste

  • 1 tbsp nutritional yeast (optional)

  • chopped green onion to garnish

  • 1/4 avocado

Instructions

  • add oil to pan over medium heat and let warm

  • chop potato into cubes and add to pan along with onion, bell pepper, tomato and garlic. cover pan and let simmer for 10 min over low heat. add water to pan as needed to stir mixture.

  • once potatoes are soft, add mushroom, chickpeas, and green of choice. cover for another 10 min. add salt, pepper, and nutritional yeast as needed and plate. top with hemp seeds, avocado, and chopped green onion.
