BALSAMIC MUSHROOM BOWL
Ingredients:
1/2 cup cooked rice (1/4 cup dry to 1/2 cup water)
1 cup chopped broccoli
1 portobello mushroom or a hand full or baby bella mushrooms
1/3 cup cooked beans (I tend to use black or cannelini)
optional: sesame seeds and hemp seeds
2 tbsp balsamic vinegar
1/4 cup water
1 tsp salt
1 tsp pepper
Instructions:
cook rice (1/4 cup dry to 1/2 cup water) by boiling the water and adding rice. once boiling, reduce to simmer and let cook with lid on for 20min.
chop broccoli and add to pan with 1/2 cup water. allow pan to heat at medium until sizzling and reduce to simmer. cover broccoli and let steam for 5-10min.
in another pan, or after broccoli has cooked, add sliced portobello mushroom to pan with a touch of water and balsamic vinegar. cook on medium low until mushrooms have softened and absorbed the liquid.
serve over rice with beans (i prefer black or cannelini!) and top with sesame and hemp seeds.
