BALSAMIC MUSHROOM BOWL

Ingredients:

  • 1/2 cup cooked rice (1/4 cup dry to 1/2 cup water)

  • 1 cup chopped broccoli

  • 1 portobello mushroom or a hand full or baby bella mushrooms

  • 1/3 cup cooked beans (I tend to use black or cannelini)

  • optional: sesame seeds and hemp seeds

  • 2 tbsp balsamic vinegar

  • 1/4 cup water

  • 1 tsp salt

  • 1 tsp pepper

Instructions:

  • cook rice (1/4 cup dry to 1/2 cup water) by boiling the water and adding rice. once boiling, reduce to simmer and let cook with lid on for 20min.

  • chop broccoli and add to pan with 1/2 cup water. allow pan to heat at medium until sizzling and reduce to simmer. cover broccoli and let steam for 5-10min.

  • in another pan, or after broccoli has cooked, add sliced portobello mushroom to pan with a touch of water and balsamic vinegar. cook on medium low until mushrooms have softened and absorbed the liquid.

  • serve over rice with beans (i prefer black or cannelini!) and top with sesame and hemp seeds.
