BUCKWHEAT GRANOLA
Ingredients:
1 cup buckwheat groats
2 cups rolled oats
1 cup chopped nuts (walnuts, almonds, cashews)
1/3 coconut shreds
3 tbsp hemp seeds
3 tbsp chia seeds
3 tbsp ground flax seeds
1/2 tsp salt
1 tsp vanilla extract
1 tbsp cinnamon
1/3 cup coconut oil
4 tbsp maple syrup or honey (optional)
Instructions:
preheat over to 300F. line pan with baking liner or a bit of coconut oil to coat pan.
combine oats, buckwheat, coconut and mix. add in chopped nuts, seeds, salt, and cinnamon.
once combined, add coconut oil, vanilla extract, and maple syrup.
pour mix on baking sheet in thin layer (the more spread out, the crunchier it’ll be!). bake for about 30min or until slightly browned. allow to completely cool before scooping; this will allow the granola to stay in chunks and crisp!
