MEXICAN BOWL

Ingredients:

  • 1/2 tbsp oil (olive or avocado)

  • 1/2 small onion

  • 1/2 bell pepper

  • 1/4 cup frozen corn

  • 1 small zucchini

  • 1/2 cup pinto beans

  • 1/2 cup chopped romaine lettuce

  • 1 small tomato

  • 1/2 cup cooked rice

  • 1/4 avocado

Instructions:

  • make rice (1/2 cup water to 1/4 dry rice, boil, reduce to simmer, cover).

  • in a separate pan, finely chop onion and bell pepper and add to pan with oil. turn to medium heat and allow mix to soften. add corn and chopped zucchini and let cook.

  • chop romaine and tomato.

  • once rice is complete, add to bowl along with cooked veggies and lettuce and tomato.

  • rinse pinto beans and add to dish. top with avocado.
