QUINOA SALAD

Ingredients:

  • 2 tbsp neutral oil (I prefer avocado)

  • 1 cup cooked quinoa

  • 1/2 red onion

  • 1/2 large cucumber

  • 1 cup cherry tomatoes

  • 1/2 cup chickpeas

  • 1/2 avocado

  • salt/pepper to taste

Instructions:

  • make quinoa (2 cups water to 1 cup dry, boil, reduce to simmer, cover).

  • chop red onion, cucumber, and tomatoes into moderately small pieces.

  • once quinoa is done, place in fridge for awhile to cool (not necessary but enhances the flavors and makes for a great, summer dish!)

  • after quinoa is cooled, add oil and stir.

  • rinse chickpeas and add to oiled quinoa along with red onion, cucumber, and tomatoes.

  • add salt and pepper to taste (about 1/2 tsp each) and top with avocados.

  • *stores well in fridge for 5 days (without avocado; chop avo fresh each day)
