BREAKFAST SANDWICH

ingredients:

  • 1/4 tsp oil

  • 1 english muffin (i use these)

  • 1/4 avocado

  • 1 pasture raised egg

  • 1 slice tomato

  • 5 pieces of spinach

  • sauce (i used to use siete queso but they discontinued..i now use this)

instructions:

  • heat up one english muffin and slice (if using gluten free or frozen, you will need to thaw first (microwave, oven, etc.) and then slice. i have found toasting them makes them too hard but, again, this is specific to these particular gluten free muffins)

  • heat up oil in pan and fry one egg

  • when egg is done, smash avocado on bread, place egg, tomato, and spinach, and top with sauce of choice
